Mixed Vegetable Salad recipe

Vegetables are important part of healthy eating and rich source of nutrients such as potassium, vitamin A, E, C, folic acid and fibres.In this recipe you can include any type of vegetable of your choice. Broccoli can provide some special cholesterol lowering benefits if you cook it by steaming. Raw vegetables also provide good amount of dietary fibre which aids in proper digestion and bowel movement.

Ingredients:

1 small cabbage

50gms of beans

100gms broccoli

1 capsicum

2 tomatoes

2 green chillies

salt to taste

coriander leaves (finely chopped)

1 lemon juice

Black pepper to taste

 

Preparation:

Cut all vegetables (except tomatoes) in small pieces and steam them.

Mix all pieces of vegetables in bowl and add salt.

Now add tomatoes cut in small pieces, chillies, pepper powder and lemon juice and mix well.

Garnish with coriander leaves.

 

Egg salad recipe

 

Hard boiled eggs make a quick snack when you are in hurry to go to school or office. It also provides excellent source of protein when used in salads for lunch time. Adding hard boiled eggs to diet adds good fats to your body to keep your heart healthy and serves as rich source of vitamins that protect your eyes and keep your bones strong.

 

Ingredients:

6 eggs (fully boiled)

2 potatoes (boiled)

1 onion

2 tomatoes

Salt to taste

2 tsp lemon juice

black pepper to taste

coriander leaves (finely chopped)

 

Preparation:

Cut each egg white into four pieces.

Remove egg yolk and mash with boiled potatoes.

Cut onions and tomatoes into rings.

Fill egg white with vegetables and mashed potato mixture.

Mix salt, pepper powder and lemon juice.

Garnish with coriander leaves.

 

Sprouted Moong Salad recipe

 

Sprouted moong are known as health rejuvenator as it is packed with good amount of fibre, protein,minerals, vitamins and enzymes. Natural sprouts are consider good for healthy body and mind development. They are rich source of antioxidants thus helps infighting against free radicals and toxins in body. Ingredients:

1 cup steamed sprouted moong

1 onion (finely chopped)

2 tomatoes (finely chopped)
¼ roasted cumin powder

1 tsp. lemon juice

¼ red chilli powder

Salt to taste

coriander leaves (finely chopped)

¼ sugar

 

Preparation:

Remove excess of water from sprouted moong.

Add onion and tomatoes to it.

Add chilli powder, cumin powder to the mixture.

Now add lemon juice and salt to taste.

(If you want you can add sugar to make it less spicy)
