Golden Beet salad with Marcona Almonds
1 golden beetroot
3 cups mixed sald greens
1/2 cup of thinely sliced onion
1 large orange, peeled and segmented with membranes removed
1/4 cup crumbled low-fat goat cheese
4 tsp of Marcona almonds
1 tsp of orange zest
1 tsp of orange juice
2 tsp vinegar
1 tsp olive oil
1 tsp mustard
1 tsp honey
1 tsp finely chopped,minced shallots
1/4 tsp salt
finely ground pepper
Preheat oven to 400 degree F. Peel the outer skin of beet root, wrap in aluminium foil and place on roasting pan.
Cook for 45 min until it is tender.
When cool, cut it into small sized pieces
to make dressing, combine all ingredients in bowl and shake well or whisk them together.
mix beet roots with onion, orange, cheese and roated almonds. Drizzle with dressing and serve.
